The Lobster Story

lobster_thumbOver twenty years ago, we started selling a few whole lobsters as a Wednesday night special. The number of customers for lobster increased dramatically and we then offered the whole lobster dishes all week long. We learned quickly that the quality improved substantially if we purchased directly from New England lobstermen. We selected Island Seafood Company because they had boats large enough to go off shore most days of the year and they made a strong commitment to consistent, fresh quality and overnight air freight service. Our lobsters are not "tank" stored more than a couple of days and often are shipped to us the day they come off the boats. We insist on offshore lobster particularly during the warmer months because of the taste and texture difference We specify a select size of over 1-1 /4 lbs. average.

Some facts: a 1-1 /4 lb. lobster is over 8 years old. If your lobster has barnacles on it, you're lucky, it will be full of meat. Lobster meat has less total fat, cholesterol, and calories than crab, shrimp, or chicken. The green tomalley and roe, or coral of the female have unique flavors and are considered a delicacy by some. Half as many lobsters are caught today as in 1890. Today, we proudly serve over 500 whole fresh lobsters a month.
